Peanut Butter Chickpea Energy Balls

Ingredients

  • 1 1/2 cups chickpeas, cooked
  • 1/2 cup peanut butter, smooth, all-natural
  • 1/3 cup honey
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch salt
  • 1 1/4 cup oat flour
  • 1/3 cup chocolate chips, mini

Instructions

  • First place chickpeas, peanut butter, and honey in a food processor and blend for about a minute on high or until the mixture is smooth.
  • Then, add in cinnamon, vanilla extract, salt, and oat flour, and pulse until combined. At this point your dough should be similar to cookie dough consistency. If things are too dry, add more peanut butter, if things are too wet, add more ground oat flour.
  • Add in chocolate chips and pulse until combined.
  • Finally, using a 1 tablespoon cookie scoop, scoop out a heaping tablespoon of dough and roll between your palms to form a ball. Repeat. Store in the fridge or freezer!

Could this be made with roasted raw chickpeas and eliminate part or all of the peanuts? Raw chickpeas taste like raw peanuts but have 1/3 fewer calories.

That could work! However, we have only tested these recipes as-is, so can’t guarantee the outcome once the recipe is changed. We do recommend making sure the chickpeas are cooked adequately (roasted or otherwise), since raw chickpeas/raw chickpea flour isn’t safe to consume.

I’ve been eating raw chickpeas for years with no apparent ill effects. What risks?

Hi Angie, consuming raw or undercooked chickpeas (meaning raw in dry form, which would only be possible if you’re creating chickpea flour at home using raw dry chickpeas and incorporating it into recipes that don’t require any baking) can cause digestive upset and is not recommended. If you purchase chickpea flour or canned chickpeas, the chickpeas have already been pre-cooked to mitigate any effects. Hopefully that helps!

I replaced the chocolate chips, with, dry sweet cranberries ,or, raisins. . cannot have caffeine, so. . !! 🙁 would it work ?

Can one use chickpea flour o(purchased in store) instead of the cooked chickpeas? In that case would I just use the weight measure?

Hi Amy, because the cooked chickpeas in this recipe retain some liquid from the cooking process, you would have to add some liquid to chickpea flour to achieve the same end result – unfortunately we don’t know how much liquid, or how similar the end result would be. If you are looking to remove the chickpea cooking step, we recommend swapping in canned (drained) chickpeas instead. Hopefully that answered your question!

Hi Lorrie, this recipe is lacking a few key cookie ingredients that help with the baking process like baking soda/powder and eggs. It’s possible that they might turn out more cracker-like if baked but we have not tested that method. You can add ½ cup of peanut butter to the cookies to make them taste like the energy balls. Hopefully that helped!

These turned out great! I made them with natural peanut butter and didn’t have oat flour, so I put oat bran in the food processor first to make it more powdery and used that and it totally worked out 🙂 I used canned chick peas, at least this time, but will try dried/cooked ones later. Not too sweet either, which is nice, and lots of fibre! Quick to make as well.

What can I use instead of honey? I don’t really like honey so maybe something else would work?. ..

These were super easy to make and 2 out of 3 of the kids love them. I used a peanut butter substitute (Wow butter or sun butter) so that I can send them to school. I also didn’t have oats so I used 1 cup whole wheat flour and 1/4 cup ground flax. I also never have mini chocolate chips so I just rough chopped a bunch of regular chips and that worked fine.

I just made these using what I had on hand (homemade coconut cashew butter, no chocolate)…so quick, easy, and totally, deliciously satisfying.
