Bean Jam

  • 2 cups cooked mashed beans
  • 4 cups water
  • 2 cups white sugar
  • 1/2 cup lemon juice


Mix mashed beans with water and bring to a boil

Remove from heat, add sugar and lemon juice then stir until sugar is dissolved

Return to heat and boil till a setting point is reached

Remove scum as it forms

Fill into prepared bottles/jars
