Boil the adzuki beans for 3 minutes in plenty of water.
Drain the hot water to remove the harsh taste.
Cook in 5 cups of fresh water over low heat for about 2 hours.
When beans are soft, add enough water to make 5 cups. Add sugar and salt. Cook for about 10 minutes or until sugar is dissolved and beans are flavoured.
Place in a bowl.
Serve warm or at room temperature.
