  • 400 g split dried fava beans
  • 6 onions
  • 10 cloves garlic
  • 2 tbsp oil
  • 2 tbsp berbere (an Ethiopian spice mix – available from Bart Spices, Waitrose and specialist stores)


Cook the beans following the instructions on the pack.

Chop the onions and garlic very finely or, better and much quicker, use the slicer attachment on a hand blender/processor to sliver them almost to a pulp.

Put the oil, berbere and onion/garlic pulp in a heavy-bottomed pan.

Stir to a paste and simmer for 45 mins.

Add the cooked beans and simmer for a further 30 mins.

Add salt to taste.

Recipe notes

Serve with yoghurt or cottage cheese.
