Oriental Fusion Pea Salad

  • 2 cups cooked (until just tender) yellow split peas
  • 1 1/2 cups cooked chicken, diced
  • 1 1/4 cups cooked white rice
  • 3/4 cup fresh bean sprouts
  • 3/4 cup shredded carrot
  • 3/4 cup sliced green onion
  • 1/4 cup green pepper, diced
  • 1 cup zesty italian dressing
  • 1 cup crispy chow mein noodles


In a bowl, combine peas, chicken, rice, sprouts, carrot, celery, onion, and pepper. Toss. Add dressing and toss until evenly coated. Cover and refrigerate 4 hours to allow flavours to develop.

Garnish with chow mein noodles and serve.
