Ingredients

Split Peas with Swiss Chard, Raisins, & Pine Nuts

  • 1 tbsp canola oil
  • 3 oz ham or bacon, diced
  • 1/4 cup pine nuts (or sliced almonds or sunflower seeds)
  • 2 cups cooked yellow split peas
  • 1/4 cup raisins, soaked in hot water and drained
  • 2 lbs Swiss chard, stems removed and leaves coarsely chopped

Directions

Heat canola oil in a large wok or skillet over medium high heat. Add ham and sauté, stirring for 1 to 2 minutes until lightly browned.

Add pine nuts, peas, and raisins. Continue cooking for 2 minutes. Add ½ the Swiss chard. Cover and cook until wilted, about 2 to 3 minutes. Add remaining Swiss chard and cook until wilted, about another 2 to 3 minutes. Serve warm.



Top
