Mashed Peas, Clotted Cream, Mint and Parsley

Fabulous with roasted shoulder of lamb.

Mashed Peas, Clotted Cream, Mint and Parsley

  • 2 tins marrowfat peas, drained
  • 50 g butter
  • 2 tbsp clotted cream
  • a good pinch of white pepper
  • sea salt
  • a small bunch of parsley and mint, chopped

Directions

Empty the contents into a saucepan and heat gently to a near boil and when nearly boiled, drain in a colander and place back in the pan. 

Add the butter, cream, pepper and sea salt, then mash until relatively smooth and creamy, stir in the mint. 

Put in a bowl and sprinkle with the parsley.
