Cod and Colourful Beans 'en Papillotte'

  • Dutch brown beans (±300 ml), rinsed and drained
  • red kidney beans (±300 ml), rinsed and drained
  • carrots (± 250 g), cooked and chopped
  • 2 1/2 cloves of garlic, crushed
  • 4 cod fish fillets (each ±120 g)
  • 100 g fresh herb butter
  • 1 lemon (sliced)
  • 8 sprigs of rosemary
  • salt and pepper
  • baking paper


Pre heat the oven to 180ºC.

Mix the beans and carrots and add the crushed garlic.

Put the cod fillets in the middle of each piece of baking paper.

Add salt and pepper and spoon the bean and carrot mix on top.

Add 25 g of herb butter, 1 slice of lemon and 2 sprigs of rosemary to each portion.

Fold the packages and tie them.

Put the packages in the oven and leave for 15 minutes.

Serve with some bread.
