Rinse the red azuki beans and put them into a pot.
Put water into the pot until it is about 2 inches above the surface of the beans. Then turn the heat to medium.
When the water boils, turn the heat to low and leave it cooking for 15 minutes more.
After 15 minutes, turn the heat to high and add 1/3 more water.
Turn off the heat when it boils and leave the pot with the lid on until the beans get swollen.
After 30 minutes, check the beans. If the bean skins still have wrinkles, leave it until the skins are stretched.
Empty the water in the pot and put fresh water again into the pot. Repeat the same cooking process as above, however this time adding the sugar in three stages to dissolve into the water.
Turn off the heat and check the condition of the beans after 30 minutes.
Take one of the beans and try mashing it between your finger. If the bean is tough and does not mash easily, turn the heat on once again until just before it boils and check the beans again.
