Zenzai

  • 1 cup azuki beans
  • 2/3 cup sugar
  • pinch salt
  • 8 pieces rice cake

Directions

Clean azuki beans and cover with 3 cups of water. Bring them to a boil over medium-high heat and boil for an additional 2-3 minutes. Drain the hot water (to remove the harsh taste).

Cover azuki beans with 5-6 cups of fresh water. Bring them to a boil over medium-high heat. Once boiling, reduce the heat to low and bring them to a very gentle simmer. Put a lid and simmer 40-50 minutes.

Make sure the azuki beans are sufficiently tender. Then add the sugar and salt and stir them occasionally until the mixture thickens.  Serve by adding it on top of a toasted rice cake.
