Slow Cooker Split Pea Curry

Ingredients

  • 1 1/2 cups split peas, dried
  • 1 28 oz can tomatoes, crushed
  • 15 15 oz can coconut milk
  • 1/2 cup onion, sweet; diced
  • 3 cloves garlic, minced
  • 1 tbsp curry paste, green
  • 1 tbsp turmeric
  • 2 tsps curry powder
  • 1/2 tsp ginger, ground
  • 1/2 tsp salt, or more to taste
  • 1 cup cream, heavy
  • 3 cups rice, basmati
  • cilantro, fresh; for garnish, optional

Instructions

  • Place all ingredients except cream, rice and cilantro in slow cooker
  • Cover and cook on high for 3-4 hours or low for 6-8 until peas are tender
  • Stir in cream (or to make it vegan you could use refrigerated plain coconut milk)
  • Cook rice according to package directions
  • Serve rice topped with split pea curry and garnish with cilantro
