Layered Taco Mason Jar Salad

Ingredients

Salad:

  • 1/2 cup black beans
  • 1/4 cup corn, kernels
  • 1/2 cup tomatoes, assorted cherry; diced
  • 1/2 avocado, diced
  • 1/4 cup onion, red; diced
  • 3 tbsp cilantro

Creamy Avocado Dressing:

  • 1/2 avocado
  • 1/2 lime, juiced
  • 1 tbsp olive oil
  • salt and pepper, to taste

Instructions

  • Add dressing ingredients into a small mixing bowl, stir vigorously with a fork until dressing is smooth.
  • In a mason jar add dressing, black beans, corn, tomatoes, avocado, red onion, cilantro. Shake before eating to coat the salad with dressing.
