Wash clean mung beans with water. Add some water and soak 1-2 hours.
Add pure water in the pot, and give a boil over a high heat. The volume ratio of pure water and mung beans is 10:1.
Add mung beans in the pot, when the water boils. Bring to boil again with the mung beans inside, and then turn to small fire until the skins of the beans float up slowly.
Remove the bean skins with a strainer. Once done, keep on pressing the rest of the mung beans in the pot with spoon, and make it slimy.
With constant pressing, mung beans slowly change into finely green bean paste. If like it sweet, you can add rock sugar or sugar to the mixture while the beans sand is hot.
Put it the bowl and it can be a hot drink, or you can also first put it in refrigerator and then drink cold. Now it is ready to serve. Enjoy.
