Ingredients
2cupsblack beanscooked, drained well
2cupscorn, kernels, frozen
1mediumbell peppergreen; diced
1/2mediumonionred; diced
1mediumtomatodiced
1/4cupcilantrofresh; minced
1/4cupolive oilextra virgin
1/4cupred wine vinegar
1/4cuplime juicefresh
saltto taste
Tortilla chipssliced (optional)
Instructions
Combine all ingredients, except for the tortilla chips, in a large bowl, and toss to coat. Taste for seasoning, adding more salt if necessary.
Let salsa meld for at least 10 minutes before serving with tortilla chips.
