Ingredients
Salad:
4cupsspinachbaby
2cupschickpeascooked
2ozfeta cheesecrumbled; optional
1/2cupcranberriesdried
1/2cuppumpkin seeds
1/2smallonionred; sliced
1smallapplegreen; chopped
Dressing:
1/4cupmustardDijon
1/4cuphoney
1/4cupapple cider vinegar
1/4cupolive oilextra virgin
1/2tspsaltplus more to taste
Instructions
In a large salad bowl, combine all the salad ingredients. Set aside.
In a jar with a tight-fitting lid, combine all the dressing ingredients. Close lid and shake to combine. Taste for seasoning, adding more salt if desired.
Pour dressing over the salad just before serving. Toss gently to coat.
