Cook split peas in a saucepan with vegetable stock over medium high heat. Once fully cooked and almost all the liquid is absorbed (about 30 minutes) transfer to a food processor.
Add all the ingredients to the food processor and pulse until smooth.
On medium high heat add your blanched plantain, sugar and cinnamon powder. As needed pour some water until it combines well. Add diced red pepper for color and take off the flame.
