Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup sugar white
  • 1 eggs
  • 1/2 cup lentil purée
  • 1 tsp vanilla extract
  • 1 cup flour all-purpose
  • 1/2 cup lentil flour
  • 1/2 tsp cinnamon
  • 3 cups rolled oats
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Cream together butter and sugars. Add egg. Beat in vanilla. Mix in lentil puree.
  3. In a separate bowl combine flour, baking soda, cinnamon and salt. Gradually mix dry mixture into butter mixture.
  4. Once completely mixed, fold in oats and chocolate chips.
  5. Put 1 tablespoon cookie dough on greased cookie sheet, repeat with remaining dough. Bake for 10-12 minutes until slightly brown.
