Ingredients

  • 6 cups mixed greens
  • 1 avocado thinly sliced
  • 1 cup tomatoes cherry or grape; sliced
  • 1 1/2 cups black beans cooked
  • 1 cup olives black; sliced
  • 1/4 cup cheddar cheese shredded
  • 1/2 cup olive oil
  • 1/4 cup yogurt Greek
  • 1 lime juiced
  • 1 lime zest only
  • 2 tbsp cilantro finely chopped
  • salt and pepper

Instructions

  1. Place the greens in a large salad bowl. Top with the avocado, tomatoes, black beans, black olives, and cheddar cheese. Set aside
  2. To make the dressing, combine the olive oil, greek yogurt, lime juice, lime zest and cilantro in a mason jar. Screw the lid on tight, then shake for 2 minutes until ingredients are combined and mixture is smooth. Season with salt and pepper to taste.
  3. Pour dressing over salad and toss before serving
