Chickpea and Tomato Pasta

  • 1 package pasta dry; spaghetti or bucatini
  • 2 cups tomatoes cherry; diced
  • 2 cups chickpeas
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 1/2 cup basil roughly chopped
  • salt and pepper


  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions to al dente.
  2. While the pasta is cooking, melt the butter in a large skillet. Add the garlic and cook for 1 minute
  3. Add the tomatoes and chickpeas and cook for two more minutes.
  4. Drain the pasta, reserving 1 cup of cooking water, and add to the skillet. Toss to combine.
  5. Add pasta cooking water as need to thicken sauce. Season with salt and pepper to taste.
  6. Divide pasta among 4 bowls and top with chopped basil.
