Ingredients

  • 1 cup chickpeas
  • 1 cup quinoa cooked
  • 3/4 cup olives sliced
  • 1 1/2 cups tomatoes grape
  • 1/2 cup onion red; diced
  • 1 cup cucumber sliced
  • 8 cups mixed greens spring mix
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp pepper black
  • 1 tbsp honey

Instructions

  1. In small bowl, whisk to olive oil, vinegar and honey until it emulsifies. Set aside. Drain and rinse chickpeas. Add all ingredients in large bowl and pour vinaigrette dressing, salt and pepper.
