Ingredients

Salad:

  • 1/2 cup black beans
  • 1/4 cup corn kernels
  • 1/2 cup tomatoes assorted cherry; diced
  • 1/2 avocado diced
  • 1/4 cup onion red; diced
  • 3 tbsp cilantro

Creamy Avocado Dressing:

  • 1/2 avocado
  • 1/2 lime juiced
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. Add dressing ingredients into a small mixing bowl, stir vigorously with a fork until dressing is smooth.
  2. In a mason jar add dressing, black beans, corn, tomatoes, avocado, red onion, cilantro. Shake before eating to coat the salad with dressing.
