Toasted Coconut and Peanut Butter Energy Bites

Cook Time 20 minutes


  • 1 cup coconut, shredded, unsweetened; toasted
  • 1/2 cup peanut butter, or other nut butter
  • 1 cup rolled oats, use gluten-free, if desired
  • 1/4 cup protein powder, pea
  • 1/3 cup honey


  • Add all ingredients to a large bowl, mix until everything is combined.
  • Refrigerate for 5 minutes, then scoop 1 tbsp of dough and roll in between your palms to create a ball.
  • Place ball on a parchment lined sheet pan and repeat with remaining dough.
  • Refrigerate for an additional 5 minutes before serving.
