Toasted Coconut and Peanut Butter Energy Bites

Ingredients
- 1 cup coconut, shredded, unsweetened; toasted
- 1/2 cup peanut butter, or other nut butter
- 1 cup rolled oats, use gluten-free, if desired
- 1/4 cup protein powder, pea
- 1/3 cup honey
Instructions
- Add all ingredients to a large bowl, mix until everything is combined.
- Refrigerate for 5 minutes, then scoop 1 tbsp of dough and roll in between your palms to create a ball.
- Place ball on a parchment lined sheet pan and repeat with remaining dough.
- Refrigerate for an additional 5 minutes before serving.
