Lentil-icious Tropical Greens Smoothie

Prep Time 5 minutes
Cook Time 5 minutes
8 oz smoothies

Ingredients

  • 2 cup apple juice
  • 2 tbsp coconut oil
  • 2 handfuls spinach, (about 2 cups)
  • 2 pieces pineapple, fresh
  • 1 cup lentils, frozen (available in most frozen vegetable sections of the grocery store, or you can pre-cook any variety of lentils and freeze)
  • 1 cup mango, frozen

Instructions

  • Blend ingredients until a smoothie consistency is formed.

i’m using some of the lentil puree i made for the cookie recipe because i froze
the left over in 1/2 cup portions .
