Lentil Oatmeal Cookies

Ingredients
- 1 cup butter, softened
- 1 cup brown sugar
- 1/2 cup sugar, white
- 1 eggs
- 1/2 cup lentil purée
- 1 tsp vanilla extract
- 1 cup flour, all-purpose
- 1/2 cup lentil flour
- 1/2 tsp cinnamon
- 3 cups rolled oats
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 350.
- Cream together butter and sugars. Add egg. Beat in vanilla. Mix in lentil puree.
- In a separate bowl combine flour, baking soda, cinnamon and salt. Gradually mix dry mixture into butter mixture.
- Once completely mixed, fold in oats and chocolate chips.
- Put 1 tablespoon cookie dough on greased cookie sheet, repeat with remaining dough. Bake for 10-12 minutes until slightly brown.

There’s a lot of sugar in this recipe. As much sugar as flour.
Agreed, I was excited to try this recipe until I saw the sugar content. So pass on this one.
Oatmeal is missing from the ingredients list, as are raisins or other dried fruit (shown in picture). Kathleen and Sharon, you can reduce the sugar to taste (I always do that to most recipes I try!), and you could probably cut back on the fat or use a combination of oil and butter.
I noticed that; doesn’t say “Oatmeal Raisin” but not only is oat(meal) left out, so is the chocolate chip amount!
I routinely reduce sugar in my other cookie recipes (choc chip, for example) by 1/4-1/3 with no loss of taste. Probably improves it.

Where do I find instructions for lentil puree? Could this be added to the recipe?
Hi Patricia! Lentil Puree is simple to make, just cook the lentils and then put in a food processor! Here’s a tutorial using White Bean Puree. You can follow the same steps, but substitute cooked lentils. Happy baking!

Can white beans be substituted for lentils?

How many cookies does this really make? Says 12 cookies – that can’t be right with the amount of oats & flour.
