Hummus Toast with Crunchy Split Peas

Toast 1: Hummus, smoked salmon, cracked black pepper, dill, crispy split peas​ 
Toast 2: Hummus, avocado, microgreens, everything but the bagel seasoning, crispy split peas​ 
Toast 3: Hummus, roasted sweet potato slices, pomegranate seeds, crispy split peas​ 
Toast 4: Hummus, cherry tomatoes, cucumbers, feta cheese, basil, crispy split peas​

Ingredients

  • 1 cup green split peas, soaked for 4 hours or boiled 10 minutes
  • 2 tbsp olive oil
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 4 slices sourdough bread, toasted
  • 2 cups hummus

Instructions

  • Prepare crispy split peas: Preheat oven to 400 degrees Fahrenheit. After soaking or boiling the split peas, drain and pat dry. 
  • Add split peas to a large baking tray and drizzle with olive oil. Sprinkle with sea salt and black pepper. 
  • Bake split peas for 10 minutes, stirring halfway through, or until split peas become crunchy and slightly browned. Remove from oven and set aside. 
  • Prepare each sourdough toast by topping each with a spoonful of hummus and toppings of choice. Enjoy!
