Chickpea Greek Salad with Balsamic Dressing

Ingredients

  • 1 cup chickpeas
  • 1 cup quinoa, cooked
  • 3/4 cup olives, sliced
  • 1 1/2 cups tomatoes, grape
  • 1/2 cup onion, red; diced
  • 1 cup cucumber, sliced
  • 8 cups mixed greens, spring mix
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp pepper, black
  • 1 tbsp honey

Instructions

  • In small bowl, whisk to olive oil, vinegar and honey until it emulsifies. Set aside. Drain and rinse chickpeas. Add all ingredients in large bowl and pour vinaigrette dressing, salt and pepper.
