7-Layer Salad with Creamy Cilantro Lime Dressing
Ingredients
- 6 cups mixed greens
- 1 avocado, thinly sliced
- 1 cup tomatoes, cherry or grape; sliced
- 1 1/2 cups black beans, cooked
- 1 cup olives, black; sliced
- 1/4 cup cheddar cheese, shredded
- 1/2 cup olive oil
- 1/4 cup yogurt, Greek
- 1 lime, juiced
- 1 lime, zest only
- 2 tbsp cilantro, finely chopped
- salt and pepper
Instructions
- Place the greens in a large salad bowl. Top with the avocado, tomatoes, black beans, black olives, and cheddar cheese. Set aside
- To make the dressing, combine the olive oil, greek yogurt, lime juice, lime zest and cilantro in a mason jar. Screw the lid on tight, then shake for 2 minutes until ingredients are combined and mixture is smooth. Season with salt and pepper to taste.
- Pour dressing over salad and toss before serving
