Hearty Split Pea Sausage and Sweet Potato Soup

Ingredients
- 1 medium onion, diced
- 4 medium carrot, sliced
- 4 stalks celery, sliced
- 4 cloves garlic, minced
- 2 medium sweet potato, peeled and cut into 1-inch cubes
- 3 cup split peas, yellow, dried; picked over and rinsed
- 1 (14 oz) link sausage, Keilbasa, turkey Polska; sliced in coins
- 2 (32 oz.) cartons chicken broth, (could sub with veggie broth)
- 1 tbsp curry powder
- 1 tbsp cumin
- 1 tsp ginger, ground
- salt, to taste (optional)
Instructions
- In a slow cooker, add onions, carrots, celery, garlic, sweet potatoes, and split peas. Cover with broth. Add spices. Cook on high 4-6 hours until sweet potatoes are tender & soup reaches a thick consistency. If needed, cook an additional hour.
