Hummus Toast with Crunchy Split Peas
Toast 1: Hummus, smoked salmon, cracked black pepper, dill, crispy split peas Toast 2: Hummus, avocado, microgreens, everything but the bagel seasoning, crispy split peas Toast 3: Hummus, roasted sweet potato slices, pomegranate seeds, crispy split peas Toast 4: Hummus, cherry tomatoes, cucumbers, feta cheese, basil, crispy split peas

Ingredients
- 1 cup green split peas, soaked for 4 hours or boiled 10 minutes
- 2 tbsp olive oil
- ½ tsp sea salt
- ½ tsp black pepper
- 4 slices sourdough bread, toasted
- 2 cups hummus
Instructions
- Prepare crispy split peas: Preheat oven to 400 degrees Fahrenheit. After soaking or boiling the split peas, drain and pat dry.
- Add split peas to a large baking tray and drizzle with olive oil. Sprinkle with sea salt and black pepper.
- Bake split peas for 10 minutes, stirring halfway through, or until split peas become crunchy and slightly browned. Remove from oven and set aside.
- Prepare each sourdough toast by topping each with a spoonful of hummus and toppings of choice. Enjoy!
