Black Bean, Salsa and Spinach Pizza

Black bean, salsa and spinach pizza

  • 1 12 - 14 inch prepared thin crust pizza
  • 1 1/4 cup cooked or canned black beans, rinsed and drained
  • 1/2 tsp hot sauce
  • 2/3 cup chopped onion
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 clove garlic, minced
  • 1/2 cup salsa
  • 1 medium tomato, diced
  • 1 cup frozen chopped spinach, tawed, drained, and squeezed dry
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tbsp chopped fresh parsley (or cilantro)

Directions

Preheat oven to 375°F (190°C).

Place pizza crust on baking sheet; bake at 375°F (190°C) for 5 minutes or until crisp.

Meanwhile, mash beans with a fork. Then mix beans with hot sauce, onion, cumin , chili powder and garlic in medium bowl, stirring to combine. Spread bean mixture over crust, leaving a 1 inch (2.5 cm) border.

Spoon salsa evenly over bean mixture; top with tomato and spinach. Sprinkle with cheeses.

Bake at 375°F (190°C) for 15 minutes or until crust is lightly browned. Garnish with parsley.

Cook’s Note: 1 ¼ cup (300 ml) cooked black beans equals 1 (14 oz/398 of ml) can black beans.
