Rinse Azuki beans in water and cook in boiling water until soft.
Add sugar and salt and cook for 10 minutes until cooked completely.
Whip dairy cream until creamy.
Mix whipped cream with the bean mixture. Transfer it to a wet vat and put in the freezer for 1 hr until frozen. Stir about three times while in the freezer. Leave a little cream for decoration.
Once frozen, scoop onto plates top with whipped cream, corn flakes and mint leaf for decoration.
