Insalata di fagioli rossi alla Toscana (Tuscan red bean salad)
Take 2 handfuls of each, fresh spinach, rocket and baby gem lettuce. Place the leaves into a bowl and scatter over 50g sliced green olives, 1 sliced red onion, 1 jar of pre-roasted peppers chopped, 20g toasted pine nuts and 400g red kidney beans. Make a simple dressing by whisking together 3tbsp of extra virgin olive oil, 2tbsp balsamic vinegar and 1 clove of crushed garlic, pour the dressing over the salad and mix well. Finely crumble over 200g of Gorgonzola cheese and 20g of grated parmesan and serve.
