Filetto di merluzzo al vino bianco e bianchi di spagna (Cod fillet with white wine and butter beans)
In a deep-sided pan gently fry 1 chopped onion, 2 sliced garlic cloves and 1 chopped celery stick in olive oil until soft. Now add 1 glass of white wine, 2 bay leaves and 3 sprigs of fresh thyme, reduce by half for about 2 minutes. Next add 150ml of vegetable stock, 200ml fresh cream and 400g of drained butter beans and bring to a simmer. Add 4 chunky fillets of cod about 6-7oz in weight and cook for a further 7 minutes, season with salt and milled pepper, finish with chopped parsley and serve.
