Alberta Beans & Bacon

Serve hot with and hearty piece of whole grain or pumpernickel bread. Just like the cowboys used to eat!

Ingredients

Alberta Beans & Bacon

  • 2 cups Great Northern beans, soaked overnight
  • 6 cups water
  • 1 Large onion, chopped
  • 3 sprigs of fresh parsley
  • 1/2 lb sliced bacon
  • 398 ml can of tomato sauce
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Directions

Cover beans with water and soak overnight. Drain and rinse beans. In a large saucepan, combine beans, water, onion, parsley and bacon slices. Bring to a boil over medium heat. Reduce heat, cover and simmer 1 hour and 15 minutes, or until beans are firm but tender.

Drain. Discard parsley and remove bacon slices. Dice bacon and brown in a small skillet over medium heat.

In a saucepan, add tomato sauce, salt and pepper to beans, return to low heat, cover and simmer 10 minutes.

Add bacon and simmer 5 minutes longer. Serve hot.

Yield: 6 servings (6 cups/1.5 L)

Serving Size: 1 cup (250 ml)
