Tomato Topped Cheese and Chickpea Dip

Ingredients

  • 1 (19 oz/540 ml) can chickpeas, rinsed and drained
  • 1 cup (250 ml) 3-cheese blend shredded cheese
  • 1/2 package (4 oz/125 g) cream cheese, softened
  • 1/2 cup (125 ml) sour cream
  • 1/4 tsp (1 ml) cayenne pepper
  • 2 green onions, chopped
  • 1/2 cup (125 ml) 3-cheese blend shredded cheese
  • 1/2 cup (125 ml) chopped tomato

Directions

Preheat oven to 350°F (180°C).

In a food processor, add chickpeas, 1 cup (250 ml) shredded cheese, cream cheese, sour cream, and cayenne pepper. Process until smooth. Stir in green onions.

Spread into oven proof baking dish.

Bake for 20 minutes or until light golden brown. Top with remaining ½ cup (125 ml) of shredded cheese and tomato. Serve with crackers.
