Sekihan (Rice with Azuki)

  • 3 cups mochigome (glutinous rice)
  • 2 tsp salt
  • 1/2 cup red azuki beans (or red cowpeas)
  • 3 tsp gomashio (black sesame seeds and salt)

Directions

Wash glutinous rice until water runs clear, then soak in fresh water for at least 5 hours, preferably overnight.

Pour 2 cups of water into the pot, put the washed azuki beans (or red cowpea) in a medium pot and boil for a few minutes.

Add additional 2 cups of water, reduce heat to low, simmer for about 30 minutes until beans are soft but not completely cooked. Drain beans but reserve the cooking liquid.

Mix the cooking liquid into soaked rice.

Mix the rice and beans and put it onto the bamboo steamer with wet cloth.

Put the bamboo steamer onto boiled pan, bring out the steam for 12-13 minutes.

Steam cook for about 30 minutes until soft and plump. Sprinkle the gomashio over it.
