Ingredients

Maddur vada

  • 1/2 cup maida
  • 1/4 cup besam / gram flour / senagapindi / kadalaimavu / kadalehittu
  • 1/4 cup rice flour / biyappindi / arisimaavu / akkihittu
  • 1/4 cup sooji / semolina / rava
  • 1/2 tbsp butter
  • 2 sprigs curry levaes
  • 1/4 bunch of curiander leaves
  • 1 large onion (or 2 small)
  • 4 green chilies
  • 1 pinch hing
  • salt to taste
  • 2 tsp oil (for dough)
  • oil for deep frying

Directions

Chop the onion(s) into small pieces.

Chop the chilies and curry and coriander leaves.

Combine the maida, besan, rice flour, sooji, salt and hing in a bowl.

Heat 2 teaspoons of oil. Add the hot oil and butter to the above ingredients.

Add chilies, leaves and onions to the mixture.

Mix. Keep aside for 5 minutes.

Add sufficient water to the mixture and make the dough, which should be slightly hard.

Cover and keep aside for 10-20 minutes.

Heat oil in a kadai or pan.

Make lemon-size balls from the dough.

Coat a plastic sheet with few drops of oil.

Flatten a ball. It should be thick and have a round shape.

Lift the plastic sheet and place the flattened dough, up-side down, on the fingers. Peel the plastic sheet from an edge. Keep the sheet aside.

Drop the flattened dough into the oil gently, when the oil becomes hot.

Keep the flame to medium.

Fry till both sides turn to brown.
