Cargamanto Beans

  • 1 lb cargamanto beans
  • 5 cups water
  • 2 tsp oil
  • 1 large carrot, whole
  • 1 medium green banana, diced
  • 1/2 cup chopped onion leaf
  • 2 cloves garlic, minced
  • 1 cup tomato, peeled, seeded, chopped
  • 1 tbsp salt

Directions

Soak the beans for 12 hours. Discard the soaking water and rinse beans.

Boil the water in a pressure cooker.

Add 1 teaspoon oil and the soaked beans.

Bring to boil, then cook on low heat for 15 minutes.

Take 1 cup of the bean broth and blend it with the carrot in a blender. Combine this mix with the beans.

Sauté onion and garlic in 1 teaspoon of oil.

Add the tomato. Cook on low heat until a sauce is formed.

Mix the sauce with beans and salt.

Cook on low heat for 20 minutes. Stir occasionally.

This dish is typically served along with white rice, pork and avocado.
