Bandeja Paisa

Bandeja Paisa is one of the most important dishes in Colombia, specially in Antioquia, the main ingredient is the cargamanto beans.

Ingredients

For 4 Person(s)

White Rice

  • 1 lb of rice
  • 1 L of water
  • 1 tbsp Aburra salt
  • 2 tbsp Aburra oil
  • 1 tbsp Aburra garlic sauce

Aburra Cargamanto Beans

  • 1 kg Aburra Cargamanto beans (soak beans the day before)
  • a spare rib
  • pich of Aburra salt
  • 2 tbsp Aburra oil
  • 2 tbsp Aburra garlic sauce
  • 1 whole medium carrot
  • 1 whole white onion

Salad

  • 1 lb white cabbage, cut into strips
  • 1 medium carrot, peeled and grated
  • 1 onion, finely chopped
  • 1 can of Aburra sweetcorn, drained
  • 1 bunch, finely chopped coriander
  • 3 tomatoes
  • Abbura Vinaigrette

Ground Beef

  • 750 g ground meat
  • 2 tbsp Aburra garlic sauce
  • 2 tbsp Aburra soy sauce
  • Aburra salt
  • 1 white onion
  • 3 tbsp Aburra oil

For serving

  • Pork rind
  • Avocado
  • Sausage
  • Arepa
  • Fried plantain
  • Black pudding
  • Fried egg

Directions

For the Rice

Cook the rice in a traditional way with all the ingredients

For the Aburra Cargamanto Beans (10 servings)

Cook the pork in the pressure cooker with water for half an hour

add the beans, onion, carrot, and oil. Leave it for 25 to 30 minutes.

Remove the onion and carrot ad blend together with the cooking water. 

Season with Aburra salt and Aburra garlic sauce, let thicken to taste, optionally add 1/2 cup hogao (It is made with round onions, long green onion, tomatoes, garlic, cumin, salt and pepper that are sauteed).

For the Salad

In a pot with boiling water and salt, dip the cabbage for a minute and a half, then rinse with cold water, drain and mix with the ingredients.

The vinaigrette is added at the time of serving. 

For the ground beef (10 servings)

Saute onion and meat in a frying pan.

Season with Aburra salt and sauces. 

Let stand and grind. 

Recipe notes

Serve with pork rind, avocado, sausage, arepa, fried plantain, black pudding and a fried egg.
